Dubbed “Italian grits” by some, soft polenta is one of the most versatile dishes around. It can be served with almost anything and can be as simple as polenta with butter and cheese or gourmet-ed up by the fanciest chefs and restaurants. We hope you enjoy our simple Soft Polenta recipe because sometimes, the simplest is the best.

Soft Polenta

Ingredients (Yields 1 gallon):

  • 6 Cups Chicken Stock
  • 6 Cups Water
  • 3/4 Cups Butter
  • 2 Tbl. Garlic
  • 3 Cups Polenta
  • 1 Cup Cream Cheese
  • 2 Cups Parmesan
  • 2 Tbl. Black Pepper
  • 1/4 Cup Olive Oil

Method:

  1. Bring water, stock, and butter to a boil in a large stock pot.
  2. Add remaining ingredients, folding in the cheese last.
  3. Finish off with olive oil after the cooking process is over for a glossy appearance.
  4. Enjoy!
